Our unique “fresh and fermented” preserves combine the savory tanginess of lacto-fermented fruits, with the rich sweetness of a traditional jam… sweet and savory in perfect harmony.
Fresh + Fermented Strawberry Preserve is a unique jam created using a two-step process. In late spring, fresh local green (unripe) strawberries are fermented in the style of umeboshi, with red shiso from our friends at the Somerville Community Growing Center. In peak summertime, fresh local red (ripe) strawberries are used to create a traditional jam, and then combined with the fermented green strawberries to complete our "fresh and fermented” preserve.
Refrigerate after opening.
- Incorporate into dressings and sauces as a tangy, sweet element
- Use the whole pieces of fruit in a baked good, like muffins or thumbprint cookies
- Add a teaspoon of the syrup to seltzer for a seasonal soda
